An 1890s Evening Fandango

There is an old Spanish word that means a high-spirited evening's entertainment and music: Fandango! That is what we call an evening at the 1890s Cowboy Camp and Chuck wagon.

Have a seat on our tram and travel across time as you tour the park 180 years of Texas history. At the 1890s campsite, an authentic chuck wagon is set up with the cook busily preparing traditional cowboy grub over an open fire. You will discover just how well fed a cowboy could be when you dig into cowboy stew, beans, bread, dessert and coffee. A cowboy musician will play traditional acoustical music and a cowboy gambler will engage everyone in a hand of cards.

Fandango options:

  • Open beer and wine bar with appropriate approval and insurance
  • Catered dinner to supplement food cooked at the chuck wagon
  • Guided tours of the George Ranch House
  • Cattle working demonstrations by ranch cowboys

Menu Options:

Sliced Beef Brisket, chicken, beans, potato salad, cole slaw, sauce, pickles, onions, jalapenos, bread, iced tea and fruit cobbler with ice cream. 

Beef and chicken fajitas, flour tortillas, Spanish rice, beans, chili con queso, picante sauce, guacamole, fresh fried corn chips, iced tea and fruit cobbler with ice cream. 

10 oz. Tenderloin steak, baked potato, salad with assorted dressings, green beans, rolls with butter, ice tea, fruit cobbler with ice cream.
